I have 2 wine barrel smokers. It is set up to do hot or cold smoking. Cold smoked cheese is great. Use the bottom barrel for the heat and the top barrel is plumbed for smoke. Comes with 5 racks, but will accommodate 5 per barrel. Each barrel has dual exhaust. Also has 2 briquette trays, bricks, and drip trays. Great for jerky, salmon, or whatever you want. Has removeable tray rods to accommodate larger meats, brisket or turkeys. You may also use a hotplate for the woodchips, or put chips on the briquettes. May separate for $300 each.
